Gerry Shelley and Jacqui Bilder opened Natural Law on December 31, 2017. Their establishment offers beer and cocktails, late night food, a beer garden, live music, and video gambling in historic Blue Island. Their mission is to offer a great hospitality experience to their bar guests. Friendly service and consistent, quality product output are paramount. Chef Jaime Esparza was born and raised in Blue Island, Illinois, where his passion for cooking began with late night viewings of Iron Chef and blossomed when his parents bought a Mexican restaurant. It was there, at the age of 13, he began to nurture his relationship with food and the kitchen. After graduating from Le Cordon Bleu in 2014, he served as one of the first Chef de Cuisines at Elite Personal Chefs before returning to run his parents’ restaurant until its sale. He was hired as the Executive Chef at Natural Law Cocktail Club and Eatery in 2017, and now brings over 15 years of experience and an unquenchable passion to create delicious and interesting food for his diners.
June has been a popular bartender in Blue Island for the past seven years. She has been making unique and delicious drinks at Natural Law for the last two. She creates a fun atmosphere that keeps people laughing and coming back for more. June is also an amazing certified personal trainer at Southside Knockout Training (SKT). Her sunny personality shines as she guides members through exercises that are as interesting and exciting as the drinks she makes at the bar. June is eager to lead members through workouts and help them become healthier versions of themselves. She creates and maintains an electrifying mood that spreads throughout the entire gym. June keeps busy with both jobs, but is always willing to help out and chat with her guests and clients. This is why she has so many repeat customers!
Kristen grew up in Buffalo, New York, and moved to Phoenix, Arizona, when she was 21. In 2011 she moved to Blue Island, Illinois. In addition to working in customer service she has been bartending in the neighborhood for the past nine years. She is a local favorite at both Natural Law Cocktail Club and the Fraternal Order of Eagles. Her regular shifts include dart league and horseshoe league nights. She is quick behind the bar and will keep your glasses full and the good times coming!
Nicole Haggerty has worked at Natural Law Cocktail Club and Eatery since 2018. Her engaging personality and years of experience in hospitality ensure our guests feel welcome each time they visit. Nicole works behind the bar every weekend making custom cocktails for visitors and serving up a great time for all. Her commitment to excellence makes her an essential part of the bar’s team.
Since moving to Blue Island from Northwest Indiana in the early ‘90s, Warren has bar-tended while working in guitar/live sound equipment sales and then as a free-lance script editor. Warren started working at Natural Law in January of 2018.
Deimante works full time in hospitality and loves the industry. She has worked as a professional at promotions, event sales, and bar management in downtown Chicago. She currently bartends at Natural Law. Her energy and enthusiasm create a welcoming experience for every guest at the bar. Her dynamic personality makes every shift a party!
Bernadette has worked in hospitality and event planning for five years. She has bartended in Blue Island for the past two years at different venues including Natural Law. She puts her professional event planning skills to use at bar events throughout the year including Party Gras, Midsummer Night's Dream, and our New Year's Eve Anniversary. She acted in our annual haunted house, The Basement, last October. She bartends on steel tip dart league night. Come by for a cold one when Bernie's working!

Nick deRamos has been in the service industry for over ten years. He has worked as a dishwasher, server, and busboy at multiple establishments. He has made a home for himself in Natural Law’s kitchen since the summer of 2018. Nick’s engaging personality and passion for food make him a perfect fit at the bar.
